Looking for a quick weeknight dinner using items from your Sigona’s Home Deliveries veggie box? Try this easy pasta with rainbow chard and garlic, which comes together in about 30 minutes! Recipe from Erin Geeson’s cookbook, The Forest Feast.
6 leaves of rainbow chard
2 tbsp olive oil
4 garlic cloves
½ lemon, juiced
2 tbsp of shredded or grated parmesan cheese
Red pepper flakes
Salt & pepper
Step 1: Fill a large pot with salted water and bring to boil. Cook 10 oz of Angel Hair pasta from packaging instructions.
Step 2:While pasta is cooking, heat olive oil in a medium saute pan over medium heat. Saute the garlic for 2 minutes until golden and fragrant. Add in the slices of rainbow chard and saute until the chard is wilted.
Step 3:Strain the pasta when al dente and add it into the pan with the rainbow chard mixture. Stir in the lemon juice and parmesan, sprinkle in red pepper flakes, more olive oil, salt & pepper.
Step 4:Divide into bowls, serve and enjoy!
Tip: Try with whole-wheat pasta!
