Creamy Nectarine-Honey Popsicles

These honey-sweetened, creamy nectarine popsicles are the perfect summertime treat on a hot day! Roasting the nectarines in honey gives them a jammy texture and brings out their sweet flavor. After letting the nectarines cool down, you will fold the mixture into a bowl of Greek yogurt, lemon juice, honey, and splash vanilla. Set in your popsicle molds and freeze overnight to enjoy the next day!


  • 3 medium nectarines sliced and peeled into wedges 
  • 5 tablespoons of honey, divided
  • 2 cups of Greek Yogurt 
  • 1 tablespoon of lemon 
  • ¼ teaspoon vanilla extract 


  1. Preheat oven to 350 degrees. Cut the nectarines sliced and peeled into wedges and toss with 2 tablespoons of honey and a sprinkle of salt. After mixed together transfer to a parchment-lined baking sheet arranging them to a single layer. Roast the nectarines for 30 minutes, flipping after 15 minutes. You want the nectarines to be soft and juicy. Set aside to cool. 
  2. While the nectarines are cooling, blend together yogurt, 3 tablespoons of honey, vanilla, and lemon in a medium bowl.
  3. When the nectarines are cooled scrape all the juices and slices into the bowl of yogurt. Then fold the mixture together. 
  4. Use a spoon to transfer the mixture into the popsicle molds. Let freeze for a minimum of five hours! 
  5. Enjoy by running warm water around the outside of the molds and gently removing the popsicles!
