Vodka Watermelon Cocktail

Hello, summer! We're all about watermelon lately and we aren't stopping yet! This vodka watermelon cocktail is the perfect drink for a warm, summer evening. This recipe is per cocktail, but it's super easy to adjust to make in a larger batches. 

You can buy watermelon juice in the store, but since the fruit is in peak season right now, you won't find anything better than juice from a fresh watermelon. Seedless watermelon is best, but you can absolutely use one with seeds. You'll just want to strain the juice to get rid of the seeds before drinking.

Here's how to make your own watermelon juice:

  1. Cut the watermelon into cubes and place into a blender. Blend for about 30-60 seconds, or until you no longer see chunks.
  2. For super smooth juice, strain the juice in a fine-mesh sieve. You can also skip this step for a more pulpy juice. 

Watermelon juice stores for about 4 days when covered in the refrigerator.

Ingredients: 

  • 1 cup watermelon juice
  • 1 1/2-2 ounces vodka
  • 1 tablespoon simple syrup or sweetener of your choice (optional, depending on how sweet your watermelon juice is)
  • 1 tablespoon lime juice
  • Fresh mint leaves, some for muddling, some for garnish
  • Limes, cut into wedges or wheels, for garnish

Directions: 

  1. Add a few mint leaves and the simple syrup (if using) to a glass and muddle together. 
  2. Add ice, vodka, watermelon juice, and lime juice to the glass, and stir together.
  3. Garnish with a sprig of mint and a wedge or wheel of lime. Enjoy!
