Watermelon Cucumber Salad

We’re loving watermelon this summer! It’s juicy, sweet and perfect for a hot day. While it’s great eaten on its own, especially as a side at a barbecue, it also makes a great ingredient in salads! This recipe combines the great flavors of summer watermelon, cucumbers, plus some added pepper flavor from the arugula.

Makes about 3-4 servings as a side, but no judgement if you decide to eat the whole salad as a meal on your own (we did!). 

Ingredients for the dressing: 

  • ¼ cup of extra virgin olive oil
  • 1 ½ tablespoons of white balsamic vinegar
  • 1 teaspoon dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon poppy seeds
  • ¼ teaspoon salt

Ingredients for the salad:

  • 4 cups arugula
  • 2 cups watermelon
  • ¼ cucumber, sliced
  • 3 oz crumbled feta cheese


  1. Whisk together the olive oil, balsamic vinegar, mustard, honey, poppy seeds and salt. Set aside.
  2. In a large bowl, add the arugula, watermelon, and cucumber. Sprinkle with Feta.
  3. Sprinkle the dressing over the salad, toss and enjoy!
