Passion fruit is ripe once its skin has a little give, but the fruit will wrinkle up as it sweetens over time. Slice them open and scoop out the pulp and seeds (they're edible). You can eat the pulp fresh on its own, on salad or yogurt, or strain the pulp to make juice, jam or a delicious addition to desserts.
