Vegan Trail Mix Energy Bites

These vegan Trail Mix Energy Bites are the perfect no-bake, healthy snack loaded with sliced almonds, shredded coconut, oats, pumpkin seeds, sunflower seeds, and Medjool dates! Medjool dates are a good source of protein, dietary fiber, magnesium, copper and potassium, and can be used in a variety of dishes due to their natural sweetness. 

As the school year is about the start, these energy bites are a great addition to a lunch box or for a quick pick-me-up. This recipe makes about 14 energy bites.


  • ¼ cup pumpkin seeds 
  • ¼ cup sliced almonds 
  • ¼ cup chia seeds 
  • ¼ cup sunflower seeds 
  • ¼ cup toasted shredded coconut 
  • 10 pitted Medjool dates 
  • 1 cup rolled oats (separate into half cups)
  • 2 tablespoons milk of choice (we used Oat milk) 
  • 1.5 teaspoon ground cinnamon 


  1. First, prepare the trail mix in a bowl; pumpkin seeds, sliced almonds, chia seeds, sunflower seeds, and toasted shredded coconut. 
  2. Using a food processor, puree the dates until it forms a ball. Next, add ½ cup of rolled oats, oat milk and cinnamon to the food processor, and pulse until oats are mostly broken down. 
  3. Transfer the dates and oats mixture to a separate bowl, then add ¾ cup of the trail mix mixture and remaining ½ cup of rolled oats.
  4. Using your hands, roll into 14 energy bite balls. 
  5. Store in the refrigerator and enjoy within a few days!
