Blackberry Goat Cheese Salad

Summer is berry season, and all four main varieties are sweet and delicious. Blackberries are the fourth most popular berry in the United States and can often be overlooked. But trust us, the sweet-tart taste of blackberries make a fabulous addition to many dishes, but our favorite right now is this blackberry goat cheese salad.

This salad is simple and delicious: fresh blackberries, peppery arugula, creamy goat cheese, and crunchy pistachios, all combined in an addictive honey mustard dressing. It's a great salad for any occasion, but especially great in summer when blackberries are local.

Makes about 3-4 servings as a side or a big salad meal for one.

Ingredients for the dressing:

  • 1 tablespoon of Dijon mustard
  • 1 tablespoon of extra virgin olive oil
  • 1 tablespoon of apple cider vinegar
  • 1/2 tablespoon of honey
  • 1 small clove of garlic, minced
  • 1 pinch of salt
  • 1 pinch of pepper

Ingredients for the salad:

  • 4 oz fresh baby arugula
  • 2 oz of goat cheese
  • 1 cup of blackberries
  • 1/4 cup pistachio kernels

Directions: 

  1. In a small bowl, whisk together the mustard, olive oil, vinegar, honey, garlic salt, and pepper. Set aside.
  2. In a large bowl, add the arugula, blackberries, and pistachios. Sprinkle with goat cheese. 
  3. Add dressing and toss to combine.
